We love fermenting and we love preserving precious local harvest! After all, that is what it is all about – preserving the goodness that nature gives us. When our farmers have an abundance of something we put it under the brine so everyone can enjoy it for weeks and months after the harvest. And the nutritional benefits only get multiplied by the fermentation process! That is how a lot of our seasonal ferments come to be 🙂
